[00;01;33;20 - 00;01;35;21] Day one. Rehydrate. [00;01;35;24 - 00;01;38;25] Place ten grams of starter in your jar. [00;01;38;28 - 00;01;40;16] Add 20g of water. [00;01;40;23 - 00;01;43;29] Stir and rest about an hour to soften the flakes. [00;01;43;29 - 00;01;50;12] Then add 20g of flour and stir until no dry pockets remain. Cover loosely and set it somewhere warm. [00;01;50;14 - 00;01;53;27] 72 to 78 degrees is the sweet spot. [00;01;54;00 - 00;02;03;27] Day two. First refreshment. Look for a few small bubbles. Discard 40g, keeping ten. Feed it 20g of water and 20g of flour. [00;02;03;28 - 00;02;09;14] Stir well and mark the level on the jar. Those early bubbles mean fermentation has begun. [00;02;09;14 - 00;02;24;19] Day three build strength. Now you want bubbles throughout and a fruity, tangy, yeasty aroma. Repeat the day two feeding. If it doubles in 4 to 5 hours, it's getting hungry. Feed it more often. Watch the rise line to see where it peaked. [00;02;24;19 - 00;02;26;00] Day four and beyond. [00;02;26;03 - 00;02;41;10] Is it ready? You're looking for four things. It consistently doubles after feeding shows bubbles throughout, has a predictable rise and peak, and smells clean and fermented. Most active starters double in 4 to 8 hours in a warm kitchen. [00;02;41;10 - 00;02;43;20] When a doubles like clockwork, it's ready to bake.
