Hands down the best Sourdough I’ve ever had. The ability to rehydrate the sourdough starter is so convenient for our family. Is the starter ready to bake with when it arrives?

Not yet. It arrives dehydrated and dormant, which is why it ships and stores without spoiling. Rehydrate it and feed it daily with the included guide. Most starters are active in about 3–7 days of daily feeding, often by day 4 or 5. It's ready when it doubles reliably after a feed.

What do I need to wake it up?

Unbleached all-purpose, bread, or whole wheat flour; room-temperature filtered or bottled water; a clean glass jar with room to expand; and a kitchen scale. Each feeding is 10 g of starter, 20 g of water, and 20 g of flour, and the guide takes you through it day by day.

Can I use tap water?

Use filtered or bottled water. Chlorinated or hot water can slow or damage the culture. It's the same lesson Bernadette learned with Las Vegas tap water before Bubba finally came to life.

Is 10 grams really enough?

Yes. Ten grams is all you start with. Every feeding grows the culture, and once it's active you keep feeding that same starter and bake with it again and again, so as long as you keep it fed you won't need another.

What if it isn't bubbling or rising?

A slow start doesn't mean the culture has failed. The usual causes are a kitchen that's too cool (72–78°F is ideal), chlorinated or hot water, not enough time, flour that needs a boost (try a little whole wheat or rye), or uneven feedings. How do I keep it going once it's active?

Bake often? Keep it at room temperature and feed it every 12–24 hours. Bake now and then? Refrigerate it and feed it about once a week, then bring it back to room temperature and feed it until it rises predictably before you bake.

How long does it keep before I start it?

It's dehydrated, dormant, and shelf-stable, so it keeps for months with no refrigeration. Start it whenever you're ready.

Why buy a starter instead of making my own?

Starting from scratch often takes a week or two of daily feeding, and plenty of first attempts fail. Bubba is an established culture Bernadette has fed without interruption since it first came to life, and every jar descends from it, so you start from a culture that already works.

What can I bake with it?

Artisan boules and batards, sandwich bread, pizza crust, focaccia, baguettes, English muffins, and, from the discard, pancakes, waffles, and crackers.

Can I return the starter?

Starter is a consumable food product, so it can't be returned. If it arrives damaged or contaminated, or doesn't arrive at all, email contact@bubbagoodcrumb.com promptly and we'll replace it or refund it.

Where do you ship, and how much is shipping?

We deliver to all 50 US states and Washington, DC. International shipping and local pickup aren't available right now. US economy shipping is free on orders of $30 (down from $40) or more after discounts and before tax; otherwise the rate appears at checkout, along with faster options. Starter usually ships Monday through Wednesday so it doesn't sit in a warehouse over the weekend.

Video script: How to Reactivate Dehydrated Sourdough Starter

Reactivating dehydrated sourdough starter is simple.

Day one. Rehydrate.
Place 10g of starter in your jar. Add 20g of water. Stir and rest about an hour to soften the flakes. Then add 20g of flour and stir until no dry pockets remain. Cover loosely and set it somewhere warm. 72 to 78 degrees is the sweet spot.

Day two. First refreshment.
Look for a few small bubbles. Discard 40g, keeping 10g. Feed it 20g of water and 20g of flour. Stir well and mark the level on the jar. Those early bubbles mean fermentation has begun.

Day three. Build strength.
Now you want bubbles throughout and a fruity, tangy, yeasty aroma. Repeat the day two feeding. If it doubles in 4 to 5 hours, it's getting hungry. Feed it more often. Watch the rise line to see where it peaked.

Day four and beyond.
Is it ready? You're looking for four things. It consistently doubles after feeding, shows bubbles throughout, has a predictable rise and peak, and smells clean and fermented. Most active starters double in 4 to 8 hours in a warm kitchen.

When it doubles like clockwork, it's ready to bake.
